Quarantine Cuisine: Butternut Pumpkin Mac and Cheese

Needless to say, quarantine is bringing out different sides to everyone. Mine, very unexpectedly is a domestic side I didn’t know I had. Turns out I love cooking. Having the extra time and energy since not being able to go into work, has seen me exploring more time consuming and complicated recipes. I’m not flambèing anything just yet but who knows.

So I thought I would share my favourite recipes that I have given a go during quarantine.

 First up Butternut Pumpkin Mac and Cheese. The ultimate comfort food with a twist. I used a recipe shared by Anna Newton from the Anna Edit l, by Waitrose and Partners and adapted it to what I had in the cupboard. 

Butternut Pumpkin Mac and Cheese Recipe

Some changes I made. I used a blend of sage, marjoram and thyme to season my pumpkin. I also used a medley of different pastas I had left over from previous meals. They all had different cooking time which made it a bit tricky but I averaged them all out and it turned out great. 

One of the best parts about this recipe is you really can adapt it to your taste. Don’t like pumpkin? Use sweet potato. Or add nothing at all. I did love the bit of depth and sweetness the pumpkin added though, would recommend. 

In the end this recipe made 6 hefty serves and the leftovers were just as good, if not better because the flavours had more time to incorporate.
